Just starting, your videos are very helpfull, thanks a ton.
how did you review the damper vent where your side fire box is attached to the grill?
I use charcoal then put apple or cherry wood for the first three hrs then use charcoal for the rest of the cooking process seems I can control the heat better with the charcoal.
I used Montgomery Inn BBQ Sauce and forgot to buy more hot sauce so I had to leave that out this time. If the weather coperates, I’ll be doing it again this weekend!
Forgot to ask! What did you use for the hot sauce in the mop and yor choice of BBQ sauce?
To start my fire I use scrap wood. I won’t used charcoal as I don’t like it mixed with my smoking wood. Nothing wrong it just my personal preference.
Does the charcoal added give you better heat or do you use it for ??? Do you start with charcoal then add hardwood? What do you use for smoke flavor?

looks to me like you use scrape pieces of lumber I thought I saw a couple of pieces of 2×4 and other building woods. I like to use my charcoal chimeny then add my hard wood for the first three hrs then go back to charcoal. Haven’t had any complaints whith this method yet.
Last weekend I added the side box to my Duo and made my first attemp at smoking a pork shoulder using your recipe. It turned out amazing! Can’t wait to do it again. Thanks for the detailed videos and keep them coming!
I always start charcoals in a charcoal chimney. But in my Char Griller I only use wood as my heat source. I prefer Oak and Almond as it is easily available in my area. Charcoal doesn’t give off a good smoke flavor that wood will produce. hope that helps.

so you ever use pre lit charcoal breqettes via charcaol chimney?
